Herby cheesy pasta side

Normally I’m pretty lazy with pasta – just boil it up and stick it in the sauce. I would very rarely do that with potatoes and I frequently jazz up my rice, so I figured why not make a little more effort with the pasta. Therefore, I whipped up a little spaghetti side dish full of cheese and herbs, which would probably work absolutely fine on it’s own. Served with meatballs and tomato sauce though, it transformed both dishes into a decadent and delicious combo.


  • Enough spaghetti for 2-4
  • About half a ball of smoked mozzarella, grated
  • A handful of finely grated Parmesan
  • A handful finely chopped fresh parsley
  • Zest of 1 lemon
  • 1 garlic clove, crushed
  • A tsp dried chilli
  • Salt, pepper and a drizzle of olive oil



Boil the pasta and drain. Leave to one side and return the pot to the pan, heat some oil over a low heat and soften the garlic and lemon zest for a minute or two. Add the spaghetti and everything else to the pot and stir thoroughly. Voila! Easy peasy, super cheesy goodness!
