Chicken Fajitas

Who doesn’t love fajitas? Food that requires self-assembly is oddly fun, and you can mix up the separate components depending on the tastes of whoever you’re eating with.

My favourite combo is: chicken, peppers & onions in spices; avocado salsa; refried beans; sour cream and cheddar cheese.

My chicken and veg recipe varies whenever I make it, but I’ve noted down my most recent attempt.


Ingredients (this makes around 10 small tortillas worth of filling. Possibly more if you don’t pack as much as humanely possible into each wrap like me)

  • 1 red pepper
  • 1 green pepper
  • 1 large white onion
  • 2 chicken breasts
  • Juice of 1 lime
  • 1 Tblspoon tomato puree
  • Just under a Tblspoon chipotle & smoked paprika paste
  • 1-2 tsps each of: ground coriander, paprika, dried oregano, cayenne pepper, smoked paprika, garlic granules, turmeric, dried chilli, honey

To be honest it’s just best to throw in what you fancy, in whatever amounts work for you.


Thinly slice all your chicken and veg, and mix in with all the spices etc. Heat a pan over a medium-high heat and chuck in all the chicken & veg, cooking until the veg is softening and the chicken is cooked through. Serve hot in wraps with the accompaniments of your choice.


I feel you’ve only done it properly if you struggle to close the wrap over all the fillings.
