Avocado Salsa

This is a great little salsa – it’s quick, you can make it in advance and chuck it in the fridge until you need it, and it’s versatile. It’s a great side dish to have with a BBQ, and it’s amazing in fajitas, with fish, with burgers… you name it.

Ingredients

  • 1 cucumber, deseeded and chopped (make it as chunky or fine as you’d like)
  • A pack of small, tasty tomatoes – piccolo tomatoes work well – halved.
  • 2 avocados, chopped
  • Large handful fresh coriander, roughly chopped
  • Juice of 2 limes
  • Salt & pepper to taste
  • A little bit of chilli (optional) fresh or dried.

Method

Chuck everything in a bowl and mix well! I prefer to chop and add the avocado after I’ve done the rest, squeezing the lime juice over straight after, to help prevent it going brown.

It’s best served the same day but if it’s covered and left in the fridge then leftovers are fine the next day.
